Now, in the great universal warehouse of things that are good for you, there aren’t very many items that can claim to be as delicious as a freshly brewed cup of grassy green Sencha. Seriously, compare it to a spoonful of cod liver oil if you don’t believe us. Top quality Senchas like this offer a light richness that can’t be found in other teas.
Considered a good tea for everyday drinking, Sencha offers long notes of wheat, clover honey, sweet grass and subtle seaweed. The cup pairs exceptionally well with foods of all sorts, it makes an exceptional palate between courses and interestingly, makes a great companion to peanut butter sandwiches.
Hot Tea Brewing Method: Bring fresh cold water to a rolling boil. Place 1 teaspoon of tea for each 200 – 260mL of fluid volume in the teapot. Pour the boiling water into the teapot. Cover and let steep for 2-3 minutes according to taste (the longer the steeping time the stronger the tea)
Note: Traditionally, the recommendation has been that green tea be brewed at 82ºC. If you wish to use traditional brewing temperatures bring the water to a boil and allow it to cool to the desired brewing temperature.
Iced Tea Brewing Method: (To make 1 Litre): Place 6 teaspoons of tea into a teapot or heat resistant pitcher. Pour 1¼ cup of freshly boiled water over the tea. Steep for 5 minutes. Quarter fill a serving pitcher with cold water. Garnish and sweeten to taste.[A rule of thumb when preparing fresh brewed iced tea is to double the strength of hot tea since it will be poured over ice and diluted with cold water]. Please note that this tea tend to go cloudy or milky when poured over ice; a perfectly normal characteristic of some high quality green teas and nothing to worry about!
