Description: Butterfly peas have a neutral taste and very mild aroma similar to peas. The most popular drink of all being Nam Dok Anchan which is a special butterfly pea flower tea drink mixed with honey and lemon and served over ice to travellers as a welcome drink in Thailand.
When first extracted from the flower, for example, when steeped in hot water to drink as tea the colour is bright blue. If a squeeze of lemon or lime is added, it then changes colour to royal purple and almost pink in some instances due to the change in acidity.
Apart from the alluring blue and purple colours and high anti-oxidant levels of the butterfly pea flowers, they are highly valued for the herbal benefits when consumed. Whilst there is no research conducted, it is believed in Thai traditional herbal medicine that butterfly pea has many health attributes such as antidepressant, assists in memory enhancement, antibacterial etc.
Thew butterfly pea flower is actually part of the legume family. It is renowned for being used for soil improvement for other crops as it adds nitrogen into the ground. The vine is naturally resistant to most pests so no pesticides or chemicals are used apart from smoke-water if needed which is a natural by-product from making charcoal and is extremely effective for deterring bugs and insects.
Hot Tea Method: Bring fresh cold water to a rolling boil. Place 1/2 teaspoon of loose tea for each 200 – 260 mL of fluid volume in the teapot.
Pour boiling water into the teapot. Cover and let steep for 1-3 minutes according to taste (the longer the steeping time the stronger the tea). Add honey or lemon juice to add flavour.
